Located in Bismarck, Los Luna's is an authentic New Mexican style dining from Chef Mark Luna.
Los Luna’s, A Taste of New Mexico, is owned and operated by Mark and Valerie Luna, along with their family. Both Mark and Valerie held completely different careers until May of 2013 when Valerie pushed her husband into following his dream of opening his own restaurant. Mark, who worked for Electric Systems here in Bismarck went to his boss, Bob, and asked what he thought about taking this leap. Bob told Mark (having been an electrician for 20 years) to follow his dreams so that he would never regret it. Bob reassured Mark that if things did not work out, he would always have a job. Mark and Valerie’s friend, Rick Becker, then gave advise, expertise, and encouragement as the couple started their journey into the restaurant industry.
Mark and Valerie moved to Bismarck, ND from their native state of Arizona where both have families that originated from New Mexico. Growing up with his mom Sylvia, Grandma Sally, and two aunts: Luby and Fran, Mark loved to be in the kitchen watching and helping them cook, observing everything they did since recipes were not used. Mark has spent countless hours in the kitchen cooking for friends and family.
After relocating to Bismarck and moving into Ponderosa’s close community, Mark began cooking for neighbors while introducing vibrant flavors of New Mexico cuisine. Hatch Green Chiles were automatically a hit. Fish tacos, green chile cheeseburgers, tamales, enchiladas, and rice would always leave neighbors wanting more.
Being in the Gateway Mall for 2 years, Mark and Valerie have relocated to 108 North Mandan Street in Downtown Bismarck. Changing the name from Los Luna’s, Authentic Mexican Restaurant to Los Luna’s, A Taste of New Mexico. Both to pay tribute to the state where their food comes from and to distinguish the flavors between regular Mexican food and New Mexico Mexican food.
